This hands on Indian cooking course is perfect for anyone who loves Indian food and spices, and wants to make it at home from scratch using their own spice blends and pastes.  On this course we will cover the following:

How to use the key spices in Indian Cooking  - this is a really important part of the course.  We will spend time going through where and how to use spices. The array of spices can be very daunting and we are here to help de mystify it. We will then turn these spices into some delicious recipes some to be enjoyed at the school, but there will be lots to take home. Here is a flavour of the types of things we will be making:

  • Butter Chicken, Murgh Makhani  - very similar to Chicken Tikka Masala,  a British invention, marinated chicken cooked in a garlic, ginger tomato, chilli, cashew nut, and cream sauce. Delicious. You will take this home, enough curry to feed 3-4 people.
  • Lamb Rogan Josh - a dish rich in cardamon, cloves, Kashmiri Chillies and cinnamon, one to make ahead. Fab for entertaining. You will take this home enough curry to feed 4-6 people. 
  •  Rotis – homemade flat breads, we will show you how you can also make these ahead of time and reheat.
  • Dal – dal with rice is India’s most popular dish.
  • Chutneys – from the Hindi word, Chatni and means sauce, we look at the chutneys used to balance a traditional meal, raita, green and red
  • Garam Masala – we will make our own blend, warming spices added to the end of a curry, but also can be used as a spice blend.

This course will give you confidence to expand your spice and Indian cooking.

Our short Cookery Courses are a great way to learn new skills and flavour ideas in a fun and relaxed atmosphere at our Perthshire cookery school. They are suitable for all levels, from the complete beginner, to someone who is looking to broaden their culinary repertoire.

Here is what to expect on the one day courses:

  • Small and informal classes.
  • Coffee and Home Baking on arrival.
  • Mixture of demonstrations & practical sessions; we believe that you can’t really get to grips with something unless you get your hands dirty!
  • All ingredients are weighed out for you in advance, giving you more time to spend on cooking.
  • All washing up done
  • A chance to eat your creations with a well deserved glass of wine. Or a light lunch will be provided if we have not cooked a meal.

  • A recipe booklet to take home with you.
  • Aprons provided.

We will be in contact with you the week before the course starts and will let you know if you need to bring any containers to take home some of the dishes you have prepared.

The approach is well signposted and the location is very pretty. The school has a nice “Masterchef” feel with the cooking stations well resourced with good quality equipment and everything you might need ready to hand. It was great to be met by a warm handshake and cup of coffee! The “chat” and “ tasting” of the spices and ingredients. Easy to understand and useful information on both the techniques and where to source the spices. I liked hearing about the meaning behind the dishes and your knowledge of how to use and balance them. The recipe cards were clear and helpful, nice to have covered holders by the work stations. The ready prepared work stations with ingredients measured and laid out beside the necessary tools and equipment ....even the oven brought up to temperature! Great to have you come round giving tips about knife skills and being willing to taste and give advice. The ability to bring a complete meal (and extras) home having being informed about the size and number of containers to bring well in advance. And of course having all our pots pans and equipment washed and returned ( thanks Dorothy)

Booking Procedure

What to expect when you book a place on a course at Let’s Cook Scotland.

Book your place online or over the phone.

A booking email will follow to confirm your booking (NB even it is for two or more places it will still just say thank you for your booking.) If you don’t receive an email thanking you for your booking you have not got a place on the course. The email is immediate if booking online and if done by phone, it will come through once we have manually booked you on to the course.

Please check your spam folder if nothing comes into your in box.

We will then keep in contact by email or by phone if you have asked us to.

An automated reminder will drop into your in box ten days before the course. This is followed up by a more personal email from us with any particular instructions/directions for the course.

If you do not receive any emails from us please contact us ASAP, as you may not be booked on to the course.
